Oven Baked Potatoes with Mustard Sauce

Ingredients

  • 3 medium Baked Potatoes
  • 100g Zucchini
  • 100g Mushrooms
  • 100g Cheese (Vegan)
  • 3 tablespoons Plant Butter
  • Salt and pepper

Sauce

  • Honey and mustard sauce

Preparation

  1. Turn on the oven to 200C (390F) with hot air.

  2. Cut the potatoes in half and make a cut in the center of each half. Drizzle with olive oil, salt, and pepper. Place on a baking tray and bake in the oven for 45 minutes.

  3. Wash the zucchini and shred them. Wash and chop the mushrooms into small slices.

  4. Take out the potatoes from the oven. Distribute the butter on top of all potatoes, add the shredded zucchini and chopped mushrooms along with cheese. Season with salt and pepper. Put the tray back in the oven and bake for 10 more minutes or until golden and crispy.

  5. Serve the baked potatoes directly from the oven. Add a warm honey and mustard sauce on top or choose your favorite sauce or dressing.
