Paleo Gluten-Free Sweet Potato Biscuits

Ingredients

  • 1 cup mashed sweet potato (cooked)
  • 3 eggs
  • 1 tsp baking soda
  • 2 1/2 cups almond flour
  • 1/2 cup tapioca flour
  • 1/4 cup ghee or butter

Preparation

  1. Cook sweet potato by microwaving, boiling, or baking until soft, then mash it.

  2. Preheat oven to 400F.

  3. Mix all ingredients together in a bowl.

  4. Scoop batter using a 1/4 cup measure onto a baking sheet lined with parchment paper.

  5. Bake for 30-35 minutes, checking at 30 minutes to see if done.

  6. Optionally top with butter and mashed raspberries.
