Paleo Gluten-Free Sweet Potato Biscuits
Ingredients
- 1 cup mashed sweet potato (cooked)
- 3 eggs
- 1 tsp baking soda
- 2 1/2 cups almond flour
- 1/2 cup tapioca flour
- 1/4 cup ghee or butter
Preparation
Cook sweet potato by microwaving, boiling, or baking until soft, then mash it.
Preheat oven to 400F.
Mix all ingredients together in a bowl.
Scoop batter using a 1/4 cup measure onto a baking sheet lined with parchment paper.
Bake for 30-35 minutes, checking at 30 minutes to see if done.
Optionally top with butter and mashed raspberries.
