Plant-Based Mexican Mince Tacos
Ingredients
Mexican mince
- 100g plant-based mince (could also use jackfruit)
- 300ml vegetable stock (or 1 tsp onion powder per cup if not available)
- 1 tablespoon tomato paste
- 1 small carrot, diced
- 1 small zucchini, diced
- 1 teaspoon oil
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- garlic powder
- onion powder
- salt
- optional: chilli powder
Other taco
- Soft tacos
- Cabbage slaw
- Tomatoes
- Avocado
Preparation
In a pan on medium heat, cook the carrot and zucchini in oil for 2-3 minutes until softened.
Add in the mince, vegetable stock, and spices and cook for 10 minutes, stirring occasionally until all the stock has been absorbed and the mince is tender.
Assemble the tacos by piling on the mince and toppings.
Tips
Enjoy every bite! The leftovers make a great filling for a burrito or burrito bowl and taste amazing the next day.
