Easy Vegan Buffalo Chickpea Tacos
Ingredients
- 1 can chickpeas, rinsed and drained
- 3-4 tbsp Frank's Red Hot Buffalo Sauce
- 1/4 red onion, minced
- 1/2 tsp dried basil
- 1/2 tsp smoked paprika
- 3 tbsp water
- 1/8 tsp cornstarch
Optional taco fillings
- spring mix
- mushrooms
- brussels sprouts
- avocado
- red onion
- red pepper
Preparation
Add all ingredients to a saucepan and bring to a low simmer.
Stir and allow the mixture to thicken for about 5 minutes.
Remove from heat and set aside.
Assembly
Assemble tacos by filling corn tortillas with the buffalo chickpeas and optional vegetables such as spring mix, mushrooms, brussels sprouts, avocado, red onion, and red pepper.
Tips
Feel free to use your own ingredients for the taco fillings based on preference.
