Quick Vegan Buffalo Chickpea Tacos

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 3-4 tbsp Franks Red Hot Buffalo Sauce
  • 1/4 red onion, minced
  • 1/2 tsp dried basil
  • 1/2 tsp smoked paprika
  • 3 tbsp water
  • 1/8 tsp corn starch

Toppings

  • 3 corn tortillas
  • spring mix
  • sautéed mushrooms
  • shredded Brussels sprouts
  • avocado
  • minced red onion
  • red pepper (for extra heat)

Preparation

  1. Add all ingredients to a saucepan and bring to a low simmer

  2. Stir and allow to thicken for about 5 minutes

  3. Set aside and assemble tacos with your choice of toppings

Tips

  1. For inspiration, try with spring mix, sautéed mushrooms, shredded Brussels sprouts, avocado, extra minced red onion, and red pepper
