Quick Vegan Buffalo Chickpea Tacos
Ingredients
- 1 can chickpeas, rinsed and drained
- 3-4 tbsp Franks Red Hot Buffalo Sauce
- 1/4 red onion, minced
- 1/2 tsp dried basil
- 1/2 tsp smoked paprika
- 3 tbsp water
- 1/8 tsp corn starch
Toppings
- 3 corn tortillas
- spring mix
- sautéed mushrooms
- shredded Brussels sprouts
- avocado
- minced red onion
- red pepper (for extra heat)
Preparation
Add all ingredients to a saucepan and bring to a low simmer
Stir and allow to thicken for about 5 minutes
Set aside and assemble tacos with your choice of toppings

For inspiration, try with spring mix, sautéed mushrooms, shredded Brussels sprouts, avocado, extra minced red onion, and red pepper
