Garlic Chili Chickpeas
Ingredients
- 1 tsp corn starch
- 2 tbsp water
- 1/4 medium red onion, diced
- 1 small red bell pepper, diced
- 1 can chickpeas, rinsed and drained
- 2 tbsp soy sauce
- 1 tbsp garlic chili sauce
- 1 tbsp maple syrup
- 1/2 tsp garlic powder
- 1/4 tsp ginger powder
- 1 tbsp sesame seeds (optional)
Preparation
Combine corn starch and water, whisking together until no clumps remain. Set aside.
Heat up a medium-sized non-stick pan. Sauté onions with a pinch of salt until softened.
Add in red bell pepper and chickpeas. Sauté for about 1-2 minutes.
Mix in soy sauce, garlic chili sauce, maple syrup, garlic powder, and ginger powder to coat chickpeas evenly.
Pour in the corn starch mixture and sesame seeds. Continue sautéing until the liquid thickens and coats the chickpeas.
Serve with rice, quinoa, couscous, wraps, or as a side with vegetables.
