Potato Hash Pancake with Marinara Sauce

Ingredients

  • 4 packed cups shredded raw potato (from 2 large potatoes)
  • 1/2 tbsp salt
  • 2 1/2 tbsp canola oil or neutral cooking oil

Marinara sauce

  • 1 can (400g) diced tomatoes
  • 3 tbsp tomato paste
  • 2 tbsp coco sugar or sugar of choice
  • 1 tsp salt, or to taste
  • 1 tsp dried basil
  • 2 tbsp olive oil

Preparation

  1. In a blender or food processor, quickly process all marinara sauce ingredients until smooth. Adjust according to desired taste.

  2. Shred the potatoes if not already done

  3. Mix the shredded potatoes with salt

  4. Heat oil in a large pan over medium heat

  5. Form the mixture into pancakes and fry until golden brown on both sides
