Quick Vegetable Curry with Rice and Broccoli

Ingredients

  • Rice
  • Broccoli florets
  • 1 onion
  • Some ginger (grated)
  • Olive oil
  • Garam masala spice
  • Coriander
  • Cumin
  • Chopped carrots
  • Red pepper
  • Half a can coconut cream
  • 150ml water
  • Curry paste
  • Sesame seeds

Preparation

  1. While preparing the vegetables, cook the rice.

  2. Wash the broccoli and cook the florets in a pot with a little water for about 6 minutes.

  3. In the meantime, cut an onion and grate some ginger.

  4. Heat up olive oil in a pan and fry the onions with the ginger.

  5. Add garam masala spice, coriander, and cumin; fry everything for about 4 minutes.

  6. Then add chopped carrots and red pepper; fry for 5 minutes.

  7. Add half a can of coconut cream and about 150ml water; bring to a boil.

  8. Add curry paste and simmer for 10 minutes.

  9. Serve with the rice, the steamed broccoli, and sesame.

  10. You can use any vegetables from your fridge for variation.
