Quick Vegetable Curry with Rice and Broccoli
Ingredients
- Rice
- Broccoli florets
- 1 onion
- Some ginger (grated)
- Olive oil
- Garam masala spice
- Coriander
- Cumin
- Chopped carrots
- Red pepper
- Half a can coconut cream
- 150ml water
- Curry paste
- Sesame seeds
Preparation
While preparing the vegetables, cook the rice.
Wash the broccoli and cook the florets in a pot with a little water for about 6 minutes.
In the meantime, cut an onion and grate some ginger.
Heat up olive oil in a pan and fry the onions with the ginger.
Add garam masala spice, coriander, and cumin; fry everything for about 4 minutes.
Then add chopped carrots and red pepper; fry for 5 minutes.
Add half a can of coconut cream and about 150ml water; bring to a boil.
Add curry paste and simmer for 10 minutes.
Serve with the rice, the steamed broccoli, and sesame.
You can use any vegetables from your fridge for variation.
