Quinoa Crunch Salad with Dressing
Ingredients
Dressing
- 1/2 cup peanut butter
- 1/3 cup soy sauce
- 1/3 cup vinegar
- 1/4 cup sesame oil
- 1-2 tablespoons chili paste (like sambal oelek)
- 2 tablespoons honey (or agave for vegans)
- 1 clove garlic
- 1 knob of fresh ginger, peeled
Salad
- 2 cups quinoa
- 1 cucumber
- 1 bell pepper
- 1 mango
- A few carrots
- Half a head of purple cabbage
- A few cups shelled edamame
- Optional crunchy toppings (e.g., spicy cashews)
Preparation
Cook 2 cups of quinoa and let it cool.
Chop a cucumber, a bell pepper, a mango, a few carrots, and half a head of purple cabbage.
Cook and cool a few cups of shelled edamame.
Build the salad by combining the veggies, quinoa, dressing, and top with your favorite crunchy toppings.
