Quinoa Crunch Salad with Dressing

Ingredients

Dressing

  • 1/2 cup peanut butter
  • 1/3 cup soy sauce
  • 1/3 cup vinegar
  • 1/4 cup sesame oil
  • 1-2 tablespoons chili paste (like sambal oelek)
  • 2 tablespoons honey (or agave for vegans)
  • 1 clove garlic
  • 1 knob of fresh ginger, peeled

Salad

  • 2 cups quinoa
  • 1 cucumber
  • 1 bell pepper
  • 1 mango
  • A few carrots
  • Half a head of purple cabbage
  • A few cups shelled edamame
  • Optional crunchy toppings (e.g., spicy cashews)

Preparation

  1. Cook 2 cups of quinoa and let it cool.

  2. Chop a cucumber, a bell pepper, a mango, a few carrots, and half a head of purple cabbage.

  3. Cook and cool a few cups of shelled edamame.

  4. Build the salad by combining the veggies, quinoa, dressing, and top with your favorite crunchy toppings.
