Simple and Fresh Kale Slaw
Ingredients
- 1 kale bunch
- 1/2 a small red cabbage
- 1/2 a small red onion
- 1/4 cup hemp hearts
Dressing
- 2 tbsp olive oil (divided)
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tbsp water
- Salt and pepper to taste
Preparation
Wash, trim and chop the kale.
Place the kale in a large bowl and drizzle with 1 tablespoon olive oil and 1 teaspoon sea salt, then massage with your hand for 5 minutes.
Thinly slice the cabbage and red onion.
Whisk together the dressing ingredients.
Add the cabbage and onion to the kale, and toss well with the dressing.
Serve with hemp hearts and optionally add other nuts and seeds for crunch.
Tips
This slaw can be prepared ahead of time and stored in the fridge for up to a week.
It is great as a side dish, on top of sandwiches, or mixed with salads.
It makes a nice addition to bring to a BBQ.
