Simple Tomato Pasta with Kidney Beans

Ingredients

  • 125g pasta of choice
  • 1/2 medium onion, chopped
  • 1 medium carrot, peeled and chopped
  • 100g mushrooms, chopped
  • 2 tbsp tomato paste
  • 1/2 tsp cumin
  • 1/2 tsp garlic granules
  • 1 can red kidney beans, drained and rinsed
  • 1/2 can chopped tomatoes, chopped
  • 1 tbsp tamari
  • Black pepper to taste

Preparation

  1. Cook the pasta according to packaging instructions

  2. Meanwhile, add the onion and the carrot to a non-stick frying pan and cook for 3-4 minutes, until softened

  3. Then, add the mushrooms and cook for a further 2 minutes

  4. Add the tomato paste, cumin, and garlic granules and stir to coat the ingredients, then stir in the kidney beans together with the chopped tomatoes, tamari and black pepper

  5. Cook over a medium heat for 4-5 minutes, then drain and rinse the pasta and stir it in until coated in the sauce
