Single-Serving Blueberry Banana Bread
Ingredients
- 1 tbsp. coconut oil/butter/ghee
- 1 egg (you can use a flax egg, but the bread doesn’t set as much)
- 1 small ripe banana (mashed)
- 1/2 tsp. baking powder
- 3 tbsp. almond flour
- 1 tbsp. coconut flour
- 1/2 tsp. cinnamon
- 2-3 tbsp. blueberries
- 1 scoop @vitalproteins collagen (optional)
Preparation
In a microwaveable mug, melt the coconut oil for about 20-30 seconds.
Let it cool for a few seconds, then whisk in the egg and mashed banana.
Stir in the dry ingredients.
Fold in the blueberries.
Microwave for 2 1/2 to 3 minutes.
