Single-Serving Blueberry Banana Bread

Ingredients

  • 1 tbsp. coconut oil/butter/ghee
  • 1 egg (you can use a flax egg, but the bread doesn’t set as much)
  • 1 small ripe banana (mashed)
  • 1/2 tsp. baking powder
  • 3 tbsp. almond flour
  • 1 tbsp. coconut flour
  • 1/2 tsp. cinnamon
  • 2-3 tbsp. blueberries
  • 1 scoop @vitalproteins collagen (optional)

Preparation

  1. In a microwaveable mug, melt the coconut oil for about 20-30 seconds.

  2. Let it cool for a few seconds, then whisk in the egg and mashed banana.

  3. Stir in the dry ingredients.

  4. Fold in the blueberries.

  5. Microwave for 2 1/2 to 3 minutes.
