Spicy Corn Cob Delight

Ingredients

  • Corncobs: 4-5
  • Turmeric powder: 1/2 tsp
  • Red chilli powder: 1/2 tsp Kashmiri
  • Garlic pepper seasoning: 1 tbsp
  • Mango powder: 1 tsp
  • Dukkah mix: 2 tbsp
  • Salt: According to taste
  • Lemon: 1 (for rubbing on the corns in the end for extra flavors)

Preparation

  1. Start by boiling the corncobs until they are tender. You can do this on the stove or even on a grill.

  2. Once the corncobs are cooked, carefully remove them from the boiling water or grill and let them cool slightly.

  3. In a small bowl, mix together the turmeric powder, red chilli powder, garlic pepper seasoning, mango powder, and salt. This will be your spicy seasoning blend.

  4. Take each corncob and rub the spicy seasoning blend all over them. Make sure to coat them evenly for a burst of flavor.

  5. Preheat a grill or a stovetop grilling pan. Place the seasoned corncobs on the grill and cook them for a few minutes on each side. This will give them a nice char and enhance the flavors.

  6. While the corncobs are grilling, you can prepare the dukkah mix. Dukkah is a flavorful Egyptian nut and spice blend. Mix it with a bit of olive oil to form a paste.

  7. Once the corncobs are nicely grilled, remove them from the heat and brush the dukkah paste over them. The nutty and spicy flavors will add a delightful crunch.

  8. Finish by squeezing fresh lemon juice over the spicy corn cobs. The citrusy tang will balance out the flavors and brighten the dish.
