Spicy Manjo Salad for Winter
Ingredients
- 1.5 kg tomatoes
- 1 kg eggplants
- 1 kg bell peppers
- 500 g onions
- 150 g carrots
- 100 ml vegetable oil
- 50 g sugar
- 50 ml 9% vinegar
- 50 g salt
- 1 head garlic
- 1 hot pepper
- 1 teaspoon ground black pepper
Preparation
Clean the vegetables.
Cut the eggplants into circles.
Cut the bell peppers and onions into strips.
Grind the tomatoes, carrots, hot pepper, and garlic through a meat grinder.
Add sugar, ground black pepper, vinegar, salt, and vegetable oil to the mixture.
Bring to a boil.
Simmer on low heat for forty minutes.
Distribute the finished Manjo into sterilized liter jars and seal them.
