Spicy Manjo Salad for Winter

Ingredients

  • 1.5 kg tomatoes
  • 1 kg eggplants
  • 1 kg bell peppers
  • 500 g onions
  • 150 g carrots
  • 100 ml vegetable oil
  • 50 g sugar
  • 50 ml 9% vinegar
  • 50 g salt
  • 1 head garlic
  • 1 hot pepper
  • 1 teaspoon ground black pepper

Preparation

  1. Clean the vegetables.

  2. Cut the eggplants into circles.

  3. Cut the bell peppers and onions into strips.

  4. Grind the tomatoes, carrots, hot pepper, and garlic through a meat grinder.

  5. Add sugar, ground black pepper, vinegar, salt, and vegetable oil to the mixture.

  6. Bring to a boil.

  7. Simmer on low heat for forty minutes.

  8. Distribute the finished Manjo into sterilized liter jars and seal them.
