Spicy Tofu Cream Cheese Stuffed Padrons

Ingredients

  • Padron peppers
  • 125g soft tofu
  • 4 tablespoons vegan cream cheese
  • Chili
  • 1/4 teaspoon smoked paprika
  • A few drops of lime juice
  • 1 tablespoon oat cream
  • Parmesan
  • Salt and pepper
  • Bread crumbs

Preparation

  1. Halve the padron peppers and remove the seeds.

  2. Place the peppers on a baking tray with parchment paper.

  3. Make the cream cheese sauce by mixing all the sauce ingredients until smooth.

  4. Stuff the padron peppers with the sauce.

  5. Preheat the oven to 200C and bake for 12-15 minutes.

  6. If making homemade bread crumbs, roast bread slices in the oven until crispy, cool, and blend into crumbs.

  7. After baking, sprinkle with bread crumbs, chili, a pinch of sea salt, and parmesan; optionally drizzle with oil.

  8. Bake again for 3-4 more minutes.

  9. Serve and enjoy with additional sauce or use with other pepper varieties for variation.
