Thai Papaya Salad

Ingredients

  • 250 gram shredded green papaya(soak in ice water for 15 minutes, to add more crunchiness). 1/2 cup green beans, cut into 1/2 inch sticks
  • 1/2 cup shredded carrots
  • 5-6 cherry tomatoes, cut into half
  • 3-4 tbsp Vegan fish sauce(full recipe in my IGTV description)
  • 4 clove garlic
  • 1 1/2 tbsp fermented black soybeans
  • 1-2 birds eye chillis
  • 25 gram coconut sugar or use any your fav sweetener
  • Juice of 1 lime
  • 1/4 cup roasted peanuts
  • 1/4 cup Thai basil

Preparation

  1. Add in the garlic, coconut sugar, roasted peanuts and chillies in a mortar

  2. Next pound together all the ingredients and make sure it’s well combine

  3. Then add the vegan fish sauce, green beans and carrots, continue pounding everything together to bring all the flavours together

  4. Finally add the shredded papaya and pound as well

  5. Lastly add in the lime juice and Thai basil, coat all the ingredients well in the sauce

  6. Taste and adjust the lime juice or vegan fish sauce to your liking

  7. Pour the salad into a bowl and enjoy
