Valentine's Day Pink Waffles
Ingredients
- 1 1/2 cup gluten free flour
- 3 eggs or substitute with chia egg or flax egg
- 1 1/2 tsp baking powder
- 1/2 cup almond milk
- 3 tbsp flaxseed meal
- 2 scoops protein of your choice
- 1 tsp apple cider vinegar
- 1 tsp olive oil
- Pinch of salt
- Pink Pitaya powder to desired color
Toppings
- Strawberries or dragonfruit
- Coconut
- Powdered sugar (optional)
- 100% maple syrup
Preparation
Mix dry ingredients together in a bowl: flour, baking powder, salt, flaxseed meal, and protein powder.
In a separate bowl, whisk wet ingredients: eggs (or substitutes), almond milk, apple cider vinegar, and olive oil.
Combine the wet and dry mixtures until well blended.
Stir in Pink Pitaya powder until the desired color is achieved.
Preheat a waffle iron and pour batter into it, cooking until golden brown and crisp.
Serve the waffles with desired toppings.
