Vegan Chickpea Pasta Bolognese
Ingredients
- 200 grams beyond beef
- 1 onion
- 10 ounces tomato paste
- avocado oil
- salt and pepper
- 17 ounces diced tomatoes
- vegan Parmesan
- 1 pack 8 ounces chickpea pasta
Preparation
Cook the chickpea pasta in boiling water on medium-high heat for 12 to 14 minutes, then strain and set aside.
While the pasta is cooking, chop the onion into small cubes and cook in a pan with avocado oil for about 3 minutes.
Add the beyond beef, use a wooden spoon to break it up and stir while cooking for 3 to 4 minutes on medium heat.
Make space in the middle, add a few drops of oil, and add the tomato paste; let it cook alone for 3 to 4 minutes until darker, stirring to avoid burning.
Add salt and pepper, then add the diced tomatoes; mix well, cover, and cook for another 5 minutes.
Add the cooked chickpea pasta to the sauce, mix well, and serve.
Tips
Optionally, drizzle with fresh olive oil and add vegan mozzarella on top for extra flavor.
