Vegan Hollandaise Sauce for Asparagus

Ingredients

  • 4 tbsp plant-based butter
  • 2.5 tbsp flour
  • 100 ml vegetable broth
  • 110 ml soy cream
  • 1 tsp mustard
  • 2.5 tbsp white wine
  • 1 tbsp lemon juice
  • Salt, pepper

Preparation

  1. Melt the butter in a pot

  2. Add the flour and mix well to avoid lumps

  3. Slowly add the vegetable broth and keep stirring

  4. Bring to a boil then add the remaining ingredients gradually

  5. Add water if needed to achieve desired consistency

  6. Season with salt and pepper

  7. Cook for about 5 more minutes while stirring
