Vegan Mongolian Beef Stir Fry with Udon

Ingredients

  • Seitan chunks
  • Udon noodles
  • Shredded cabbage
  • Shredded carrots

Sauce

  • 1/4 cup hoisin sauce
  • 1/4 cup light soy sauce
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1/4 cup water
  • 1 tablespoon avocado oil
  • 1 tablespoon tapioca starch or cornstarch

Preparation

  1. Whisk all sauce ingredients together in a small saucepan and heat until bubbling and thick. Set aside.

  2. Cook seitan chunks with a little of the sauce until done.

  3. In a wok, cook the vegetables and udon noodles.

  4. Pour the sauce over the stir-fry and heat through. Serve.
