Vegan Mongolian Beef Stir Fry with Udon
Ingredients
- Seitan chunks
- Udon noodles
- Shredded cabbage
- Shredded carrots
Sauce
- 1/4 cup hoisin sauce
- 1/4 cup light soy sauce
- 1 tablespoon grated ginger
- 3 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1/4 cup water
- 1 tablespoon avocado oil
- 1 tablespoon tapioca starch or cornstarch
Preparation
Whisk all sauce ingredients together in a small saucepan and heat until bubbling and thick. Set aside.
Cook seitan chunks with a little of the sauce until done.
In a wok, cook the vegetables and udon noodles.
Pour the sauce over the stir-fry and heat through. Serve.
