Vegan Nachos with Jalapeno Cheese Sauce

Ingredients

  • 2 tablespoons avocado oil
  • 1 jalapeno
  • 2 garlic cloves
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 2 cups oat milk
  • 2 cups vegan cheddar cheese
  • Corn chips
  • Refried beans
  • 1 lime
  • Cilantro cashew cream

Preparation

  1. Heat the oil over medium heat and add in the garlic and jalapeno. Cook while stirring for 1 minute.

  2. Add in the flour and spices. Cook for 30 seconds.

  3. Pour in the milk and turn heat to high. Whisk while heating.

  4. Once bubbles start to form in the middle and the sauce is thickened, turn off the heat. Whisk in the cheese. If it doesn't fully melt, turn the heat back to medium and whisk while heating.

Assembly

  1. Arrange corn chips on a serving plate

  2. Add refried beans on top of the chips

  3. Pour the cheese sauce over the nachos

  4. Drizzle with lime juice and cilantro cashew cream
