Zaatar-Dusted Pumpfu Rainbow Salad Bowl
Ingredients
- 4 oz Pumpfu
- Drizzle of extra virgin olive oil (for marinade)
- 1 tablespoon zaatar seasoning
- 2 large handfuls spring mix greens
- Kalamata olives
- Cubanelle pepper
- Cherry tomatoes
- Baby broccoli stems
- Shredded carrots
- Red onion
- Sprinkle of hemp seeds
- Extra virgin olive oil (for dressing)
- Lemon (for dressing)
Preparation
Marinate the Pumpfu with a drizzle of extra virgin olive oil and zaatar seasoning.
Prepare the vegetables by washing and chopping them as needed.
Assemble the spring mix greens in a bowl and add the marinated Pumpfu along with the other vegetables.
Drizzle with extra virgin olive oil and lemon juice, then sprinkle with hemp seeds and serve.
