No-Bean Raw Zucchini Hummus
Ingredients
- 1 cup sliced zucchini (peeled or unpeeled)
- 1/3 cup of tahini (sesame paste)
- 2 - 3 cloves of garlic ??2/3 cup of fresh lemon juice (plus more to taste)
- 1/4 cup fresh herbs (options: parsley, mint or both)
- 1/4 tsp of crushed black pepper
- Optional: sea salt to taste
Preparation
Blend all ingredients until smooth and sprinkle paprika or cumin on top to serve
