No-Bean Raw Zucchini Hummus

Ingredients

  • 1 cup sliced zucchini (peeled or unpeeled)
  • 1/3 cup of tahini (sesame paste)
  • 2 - 3 cloves of garlic
  • 2/3 cup of fresh lemon juice (plus more to taste)
  • 1/4 cup fresh herbs (options: parsley, mint or both)
  • 1/4 tsp of crushed black pepper
  • Optional: sea salt to taste

Preparation

  1. Blend all ingredients until smooth.

  2. Sprinkle paprika or cumin on top to serve.

  3. Enjoy with veggies.
