Spiced Lamb Chops with Mashed Potatoes
Ingredients
- 4 lamb chops
- 1.5 teaspoons salt
- 0.5 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 0.5 teaspoon cardamom
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 2 chili peppers, chopped
- 2 cups water
- 3 large tomatoes, peeled and chopped
- 0.5 cup black olives, sliced
Potato mixture
- 4 large potatoes
- 0.25 cup butter
- 1 cup milk
- 1 teaspoon salt
- 0.25 teaspoon black pepper
Preparation
In a small bowl, place the salt, pepper, paprika, cumin, coriander, and cardamom and mix well.
Spread half the spice mixture on the lamb chops and rub well to coat them completely.
Heat olive oil in a large skillet and add the lamb chops, stirring with a wooden spoon until the color changes.
Add the remaining spices to the lamb in the skillet.
Add onion, garlic, chili peppers, and tomatoes and stir for a few seconds.
Add water, cover the skillet, and cook on medium heat for one hour until the lamb is done and a light sauce forms.
Add olives and boil for 5 minutes.
Peel the potatoes and cut them into cubes.
In a large pot, boil a generous amount of water, add the potatoes, and cook until done.
Mash the hot potatoes with a masher until smooth.
Add butter, salt, pepper, and milk and stir with a wide plastic spoon until the milk is absorbed.
For serving, place mashed potatoes on a plate, spread as a layer, add lamb chops, pour sauce over, sprinkle with parsley and tomato cubes, and serve hot.
