Spinach and Cheese Pastries

Ingredients

  • 1 tbsp oil
  • 1/2 an onion
  • 1 clove of garlic
  • 1/4 tsp of salt
  • 1 tsp cumin
  • a pinch of chilli flakes
  • 3 handfuls of washed baby spinach
  • 100g soft cheese
  • puff pastry or shortcrust pastry
  • tortilla wraps (optional)

Preparation

  1. Heat 1 tablespoon of oil in a pan over medium heat.

  2. Add the chopped onion and minced garlic, and sauté until softened.

  3. Stir in 1/4 teaspoon of salt, 1 teaspoon of cumin, and a pinch of chili flakes.

  4. Add the baby spinach and cook until wilted.

  5. Remove from heat and stir in 100g of soft cheese until combined.

  6. Preheat the oven to gas mark 5-6.

  7. Place 1/2 teaspoon of the filling in the center of a large circle cut from puff or shortcrust pastry and seal the edges with egg or by pressing with a fork.

  8. If using puff or shortcrust pastry, bake in the oven for 15-20 minutes until golden. If using tortilla wraps, assemble and serve without cooking.
