Spinach and Cheese Pastries
Ingredients
- 1 tbsp oil
- 1/2 an onion
- 1 clove of garlic
- 1/4 tsp of salt
- 1 tsp cumin
- a pinch of chilli flakes
- 3 handfuls of washed baby spinach
- 100g soft cheese
- puff pastry or shortcrust pastry
- tortilla wraps (optional)
Preparation
Heat 1 tablespoon of oil in a pan over medium heat.
Add the chopped onion and minced garlic, and sauté until softened.
Stir in 1/4 teaspoon of salt, 1 teaspoon of cumin, and a pinch of chili flakes.
Add the baby spinach and cook until wilted.
Remove from heat and stir in 100g of soft cheese until combined.
Preheat the oven to gas mark 5-6.
Place 1/2 teaspoon of the filling in the center of a large circle cut from puff or shortcrust pastry and seal the edges with egg or by pressing with a fork.
If using puff or shortcrust pastry, bake in the oven for 15-20 minutes until golden. If using tortilla wraps, assemble and serve without cooking.
