Stuffed Pitas with Sour Cream Tzatziki
Ingredients
Tzatziki sauce
- 1/2 cup sour cream
- 1 whole cucumber
- 1 clove garlic
- 1 tsp lemon juice
- 1 tsp fresh dill
- 1/2 tsp olive oil
- 1/2 tsp pink Himalayan salt
- 1/8 tsp garlic powder
- Fresh cracked black pepper
Pita fillings
- 4 pitas
- Spinach
- Tomatoes
- Red onion
- Cucumber
- Kalamata olives
Preparation
Combine the first nine ingredients in a large bowl and stir well.
Place the sauce in the fridge once finished.
Slice the pitas in half and gently open the halves to form pockets.
Lay spinach, onion, tomatoes, cucumber, and olives inside the pita pockets.
Grab the tzatziki sauce and dress the pitas, garnish with lemon zest and chopped dill, and enjoy.
