tabouleh
Ingredients
- 150g bulgur
- 450ml vegetable broth
- 2 handful parsley
- 1 handful mint
- 1 cucumber
- 3 tomatoes
- 1 red onion
- juice of 1 lemon
- 5tb olive oil
- Salt
- pepper
Preparation
Cook the bulgur in the vegetable broth for about 7 minutes
Keep stirring it in between and add a bit more water if needed
Let it cool down and rinse in cold water
Chop the cucumber, onion and tomatoes in tiny pieces
Chop parsley and mint in really small pieces
Mix with the bulgur
Mix in lemon juice, salt, pepper and olive oil
