Delicious Katsu Mac and Cheese

- 2 x Quorn battered fillet
- 180g of spirali pasta
- 6 x The Laughing Cow extra light cheese triangles
- 1 tbsp medium curry powder
- A little garlic powder
- Onion salt
- Ground ginger
- 40g Sainsbury's grated mozzarella
Curry sauce
- 250ml water
- 1 tbsp curry powder
- 1 tsp garlic powder
- 1 tsp onion salt
- 1/2 tsp ground ginger
- Pinch of Chinese 5 spice
- 1 The Laughing Cow extra light cheese triangle
- 1 tbsp cornflour
- Sweetener to taste
Garnish
- Tender stem broccoli
- Radish
Preparation
Oven cook the Quorn battered fillets, then slice them on a jaunty angle.
Cook the spirali pasta in water for 6 minutes.
Add The Laughing Cow extra light cheese triangles, medium curry powder, garlic powder, onion salt, and ground ginger to the pasta.
At the last minute, add grated mozzarella and stir through.
Curry sauce
Mix water, curry powder, garlic powder, onion salt, ground ginger, Chinese 5 spice, and a The Laughing Cow extra light cheese triangle in a pan.
Heat until melted, then sieve for a smooth sauce and return to the pan.
Mix cornflour with a little cold water, then add to the bubbling curry sauce.
Add sweetener to taste.
Serving
Combine the pasta with the curry sauce.
Garnish with tender stem broccoli and radish.
