Brown Rice Lo Mein with Peas and Mushrooms
Ingredients
- 3/4 package brown rice lo mein noodles (or your favorite noodles)
- 2 tsp sesame oil
- 1 small onion finely chopped
- 8 oz. mushrooms roughly chopped
- Dash salt and pepper
- 1 T tamari
- 1 tsp garlic powder
- 1.5 cups frozen peas
- 1.5 cups bean sprouts
- 1 T sesame seeds for garnish
- Chili flakes for garnish
Sauce
- 2 tsp chili garlic sauce
- 5 T tamari or soy sauce
- 1 T sesame oil
- 2 T rice vinegar
- 1.5 T agave or maple syrup
- 1 tsp cornstarch and 2 tsp water, whisked
Preparation
Whisk together the sauce ingredients and set aside.
Cook noodles according to package directions, drain, rinse, and set aside.
In a large skillet, add sesame oil, chopped onion, chopped mushrooms, salt, and pepper.
Cook for about 8 to 10 minutes on medium heat, stirring often, until tender and browned.
Add tamari and garlic powder, and cook for another minute.
Add frozen peas, bean sprouts, and the prepared sauce, and cook for one minute.
Add the cooked noodles, stir, and cook for 3 minutes until the sprouts wilt slightly.
Add sesame seeds and chili flakes for garnish if desired.
