Soba Noodles with Chickpea Sauce and Vegetables
Ingredients
- 100g buckwheat soba noodles
- 1 pak choy
- 150g cooked chickpeas
- 4-5 mushrooms
- 1 tbsp sesame seeds
- 1 tbsp tamari
Chickpea sauce
- 1 tbsp peanut butter
- 1 tbsp tomato paste
- 3 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 2 tbsp tamari
- 1 tsp sesame seeds
Preparation
Have a pot of water boiling, ready for the soba noodles.
Slice the mushrooms in half and sauté until all the liquid has come out of them, then add 1 tablespoon tamari to them and keep on a low heat until everything is ready.
Mix all the chickpea sauce ingredients in a cup.
In a pan, heat up the chickpeas and then add the sauce, bring to a boil and then simmer until thick and sticky.
Steam the pak choy for about 6 minutes and at the same time begin cooking the soba noodles according to packet instructions (usually about 5 minutes).
Once everything is ready, put it all in a bowl and enjoy.
