Soba Noodles with Chickpea Sauce and Vegetables

Ingredients

  • 100g buckwheat soba noodles
  • 1 pak choy
  • 150g cooked chickpeas
  • 4-5 mushrooms
  • 1 tbsp sesame seeds
  • 1 tbsp tamari

Chickpea sauce

  • 1 tbsp peanut butter
  • 1 tbsp tomato paste
  • 3 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 2 tbsp tamari
  • 1 tsp sesame seeds

Preparation

  1. Have a pot of water boiling, ready for the soba noodles.

  2. Slice the mushrooms in half and sauté until all the liquid has come out of them, then add 1 tablespoon tamari to them and keep on a low heat until everything is ready.

  3. Mix all the chickpea sauce ingredients in a cup.

  4. In a pan, heat up the chickpeas and then add the sauce, bring to a boil and then simmer until thick and sticky.

  5. Steam the pak choy for about 6 minutes and at the same time begin cooking the soba noodles according to packet instructions (usually about 5 minutes).

  6. Once everything is ready, put it all in a bowl and enjoy.
