Soba Noodles with Chinese Chickpeas, Soy Mushrooms & Pak Choy & of Course with a Generous Helping of Kimchi on the Side

Ingredients

  • 100g buckwheat soba noodles
  • 1 pak choy
  • 150g cooked chickpeas
  • 4-5 mushrooms
  • 1 tbsp sesame seeds
  • 1 tbsp tamari
  • for the chickpea sauce:
  • 1 tbsp peanut butter
  • 1 tbso tomato paste
  • 3 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 2 tbsp tamari
  • 1 tsp sesame seeds

Preparation

  1. Have a pot of water boiling, ready for the soba noodles

  2. Slice the mushrooms in half & sauté until all the liquid has come out of them, then add 1 tbsp tamari to them & keep on a low heat until everything is ready

  3. Mix all the chickpea sauce ingredients in a cup

  4. In a pan, heat up the chickpeas & then add the sauce, bring to a boil & then simmer until thick & sticky

  5. Steam the pak choy for about 6 minutes at the same time begin cooking the soba noodles according to packet (usually about 5 mins)

  6. Once everything is ready put it all in a bowl & enjoyyyy
