Soba Noodles with Chinese Chickpeas, Soy Mushrooms & Pak Choy & of Course with a Generous Helping of Kimchi on the Side
Ingredients
- 100g buckwheat soba noodles
- 1 pak choy
- 150g cooked chickpeas
- 4-5 mushrooms
- 1 tbsp sesame seeds
- 1 tbsp tamari
- for the chickpea sauce:
- 1 tbsp peanut butter
- 1 tbso tomato paste
- 3 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 2 tbsp tamari
- 1 tsp sesame seeds
Preparation
Have a pot of water boiling, ready for the soba noodles
Slice the mushrooms in half & sauté until all the liquid has come out of them, then add 1 tbsp tamari to them & keep on a low heat until everything is ready
Mix all the chickpea sauce ingredients in a cup
In a pan, heat up the chickpeas & then add the sauce, bring to a boil & then simmer until thick & sticky
Steam the pak choy for about 6 minutes at the same time begin cooking the soba noodles according to packet (usually about 5 mins)
Once everything is ready put it all in a bowl & enjoyyyy
