Viral Dumpling Soup with Curry Sauce

Ingredients

  • Frozen store-bought pork dumplings
  • 1 bok choy
  • 400 ml coconut milk
  • 1 heaped tablespoon red curry paste
  • 1.5 cups water
  • 1 (2 cm) knob fresh ginger
  • 1 spring onion sprig
  • Chili oil
  • Olive oil (for drizzling)

Preparation

  1. Sauté frozen dumplings in a nonstick pan with a drizzle of olive oil until they get a little color.

  2. Add water and cover with a lid, then simmer on low to medium heat for 12-15 minutes until the dumplings are cooked through, following pack instructions.

  3. In a separate small pot, grate in the ginger and add the curry paste and coconut milk.

  4. Stir to combine and simmer on low heat.

  5. Wash and roughly chop the bok choy, then add it into the coconut milk mixture.

  6. Remove the lid and transfer the dumplings to a plate.

  7. Ladle the soup and greens over the dumplings.

  8. Top with chopped spring onion and chili oil.

  9. Enjoy.

Tips

  1. Freeze any leftover sauce from your can into an ice cube tray and save for next time. You can also add any Asian greens that you like.
