Eggs on Spinach
Ingredients
- Using the tiniest amount of oil (and a very good non stick pan) I sautéed a small sliver of onion
- 1 clove of garlic and added fresh chopped spinach and salt. Let the spinach wilt and crack an egg over the top
- cook through as much or as little as you want and top with some crushed chillies. I was out of brown bread so served it with white instead and had a cup of green tea alongside it
