Eggs on Wilted Spinach Breakfast

Ingredients

  • tiniest amount of oil
  • small sliver of onion
  • 1 clove of garlic
  • fresh chopped spinach
  • salt
  • 1 egg
  • crushed chillies

Preparation

  1. Use a non-stick pan with a small amount of oil to sauté a small sliver of onion and 1 clove of garlic.

  2. Add fresh chopped spinach and salt, then let the spinach wilt.

  3. Crack an egg over the top and cook through as much or as little as desired.

  4. Top with crushed chillies.

  5. Serve with bread and green tea if available.
