Easy Flavorful Vegan Goulash

Ingredients

  • A chunk of celeriac
  • 2 carrots
  • 1 onion
  • 3 cloves garlic
  • Oil
  • 150g soy chunks
  • 300ml water
  • 2 tablespoons soy sauce
  • 2 teaspoons chicken spice
  • 4 tablespoons tomato paste
  • 1 tablespoon flour
  • 200ml red wine
  • 500ml water
  • Salt and pepper to taste
  • 2 bay leaves
  • 1 teaspoon dried thyme

Preparation

  1. Saute the celeriac, carrots, onion, and garlic in oil

  2. Cook the soy chunks with 300ml water, 2 tablespoons soy sauce, and 2 teaspoons chicken spice until all the water is gone

  3. Add the cooked soy chunks to the sauteed vegetables

  4. Stir in 4 tablespoons tomato paste and 1 tablespoon flour

  5. Deglaze the pan with 200ml red wine

  6. Add 500ml water, salt and pepper to taste, 2 bay leaves, and 1 teaspoon dried thyme

  7. Let it simmer for at least 30 minutes

Notes

  1. This vegan goulash is simple, packed with flavor, and perfect to serve with Pfannenknoedel

  2. Simmering longer than 30 minutes improves the flavor
