Leftovers Stir Fried Rice
Ingredients
- 5 - 6 cups of rice
- leftover chicken/fish/meat or anything you want to use up
- 2 tbsp oil
- 2 onions sliced
- 1/2 - 1 tsp salt (adjust to taste)_
- 150g mixed frozen vegetables
- 1 tsp cumin powder
- 1/2 tsp coriander powder
- 1 tsp chilli flakes
- 2 tbsp sriracha sauce
- 1 tbsp light soy sauce
Preparation
Heat oil in a pan, add the sliced onion and salt
Saute for a few mins
Add in frozen vegetables and and cook for a few minutes
Next add the spices and any leftovers you want to use up, fry for a few mins
Add the cooked rice and sauces, mix well and fry over high heat stirring quickly for 5 - 8 mins until the rice is heated all the way through
Garnish with coriander and enjoy on it's own or with some spring rolls
