Meghna's Magic Multi-Purpose Masala
Ingredients
- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1/2 tablespoon fennel seeds
- 1/4 tablespoon black peppercorns
- 3 bay leaves
- 3 cardamom pods
- 3 cloves
- 1 cinnamon stick
- 1 small star anise
- 1 dry whole red Kashmiri chili
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon asafoetida
- 1.5 teaspoons amchur powder
- 1 tablespoon kasoori methi
- 1/2 teaspoon salt
Preparation
Dry roast all the spices on medium heat until aromatic, about 5 minutes
Allow the roasted spices to cool, then transfer them to a blender jar
Add turmeric powder, asafoetida, amchur powder, kasoori methi, and salt to the blender
Grind the mixture on pulse mode until it becomes a fine powder
The masala is now ready for use
Tips
Store and use the masala like regular spice blends
This masala can be added to sabzi, dal, salads, fruit chaats, paneer, and more
