Simple Pickled Red Onions

Ingredients

  • 3 medium red onions
  • 1 cup water
  • 1 cup white vinegar
  • 1 tsp salt
  • Sugar, to taste (start with 1 tbsp)

Optional

  • 1 tsp peppercorns or pickling spice blend
  • 2-3 bay leaves

Preparation

  1. Cut off the ends of the onions, peel them, and slice into thin pieces

  2. Add the water, vinegar, salt, and sugar to a saucepan, stir, and heat on medium until dissolved

  3. Pack the onions into a clean and sterilized jar, pour the liquid over, and allow it to cool at room temperature before putting the lid on and transferring to the fridge

  4. The pickled onions will be ready in as little as 1 hour, but let them sit for at least overnight before enjoying

Notes

  1. Salt can be omitted and it still tastes great

  2. Sugar is optional; adjust to taste or leave it out completely

  3. Avoid using jars with metal lids to prevent rusting; use proper food preserve jars with glass lids or rubber seals
