Pickled Tomatoes Under Snow
Ingredients
- Tomatoes, enough to fill a 1-liter jar
- Water, 1 liter for marinade
- Sugar, 3 tablespoons
- Salt, 1 tablespoon
- Mustard seeds, optional
- Garlic, 1 heaped tablespoon, minced or grated
- Vinegar, 1 teaspoon of 9% acidity
Preparation
Puncture the tomatoes with a toothpick and pack them into a 1-liter jar.
Pour boiling water over the tomatoes and let them sit for 10 minutes.
Drain the water from the jar.
Prepare the marinade by combining 1 liter of water, 3 tablespoons of sugar, and 1 tablespoon of salt, then heat it.
Add mustard seeds if desired, 1 heaped tablespoon of minced garlic, and 1 teaspoon of 9% vinegar to the jar.
Pour the hot marinade over the tomatoes in the jar.
Seal the jar and wrap it in a towel or blanket to cool slowly.

These pickled tomatoes have a sweet garlic flavor.
