Pickled Tomatoes Under Snow

Ingredients

  • Tomatoes, enough to fill a 1-liter jar
  • Water, 1 liter for marinade
  • Sugar, 3 tablespoons
  • Salt, 1 tablespoon
  • Mustard seeds, optional
  • Garlic, 1 heaped tablespoon, minced or grated
  • Vinegar, 1 teaspoon of 9% acidity

Preparation

  1. Puncture the tomatoes with a toothpick and pack them into a 1-liter jar.

  2. Pour boiling water over the tomatoes and let them sit for 10 minutes.

  3. Drain the water from the jar.

  4. Prepare the marinade by combining 1 liter of water, 3 tablespoons of sugar, and 1 tablespoon of salt, then heat it.

  5. Add mustard seeds if desired, 1 heaped tablespoon of minced garlic, and 1 teaspoon of 9% vinegar to the jar.

  6. Pour the hot marinade over the tomatoes in the jar.

  7. Seal the jar and wrap it in a towel or blanket to cool slowly.

  1. These pickled tomatoes have a sweet garlic flavor.
