Malaysian Pickled Starfruit

Ingredients

  • 50 starfruits
  • 3/4 cup salt
  • 3 cups sugar
  • 4 cups water

Optional additions

  • Chili peppers (to taste)

Preparation

  1. Cut the starfruit in half and remove the seeds, then place them in a container.

  2. Add enough salt to wilt the fruit.

  3. Pour in water to cover the fruit and let it sit overnight.

  4. Check for foam the next day and add more salt if necessary.

  5. Allow the mixture to sit for two nights until the fruit turns yellow.

  6. Wash the fruit thoroughly to remove excess salt.

  7. In a pot, cook the sugar and water together until it boils and the sugar dissolves, then let it cool.

  8. Pour the cooled sugar syrup over the prepared fruit.

  9. Refrigerate the mixture overnight to allow the flavors to infuse.

  10. Taste the pickle and add more sugar if it is not sweet enough.

Tips

  1. Add chili peppers for a spicy flavor if desired.

  2. The pickle tastes better with longer storage time.
