Pakoras and Raita Made with Alpro Yoghurt, Mint & Cucumber

Ingredients

  • 1/2 cup besan or gram flour (use more if needed)
  • 1/4 cup rice flour or corn starch (I used cornflour, use more if needed proportionally with besan)
  • salt as needed
  • 3 green chilies (I used red) chopped (adjust to taste)
  • 2 tbsps mint or coriander leaves or dill leaves chopped
  • 1 tsp GINGER GARLIC PASTE or crushed
  • 1/4 to 1/2 tsp garam masala powder (optional)
  • 1tsp turmeric powder
  • Jeera cumin seeds (sprinkle of)
  • Black mustard seeds (sprinkle of)
  • 1crushed clove of garlic
  • 1/2 teaspoons carom seeds or ajwain (optional)
  • oil (vegetable oil/rapeseed) for deep frying as needed
  • Salt & Pepper
  • 1cup chopped cooked potatoes chopped
  • 1 medium carrot or beetroot
  • (3/4 cup julienned)
  • 1/4 cup peppers (aka capsicum/bell peppers)
  • 1 cup cabbage (shredded)
  • 1 large onion (thinly sliced)
  • 6 french beans (julienned-optional)
  • 1 cup spinach chopped (optional)

Preparation

  1. Mix well with cold water to create consistency on pics

  2. A pinch of baking powder can also be added if required fir extra crispness

  3. Allow to marinate & soak up flavours for a while before frying

  4. Drain on kitchen paper, serve with lemon wedges
