Pakoras and Raita Made with Alpro Yoghurt, Mint & Cucumber
Ingredients
- 1/2 cup besan or gram flour (use more if needed)
- 1/4 cup rice flour or corn starch (I used cornflour, use more if needed proportionally with besan)
- salt as needed
- 3 green chilies (I used red) chopped (adjust to taste)
- 2 tbsps mint or coriander leaves or dill leaves chopped
- 1 tsp GINGER GARLIC PASTE or crushed
- 1/4 to 1/2 tsp garam masala powder (optional)
- 1tsp turmeric powder
- Jeera cumin seeds (sprinkle of)
- Black mustard seeds (sprinkle of)
- 1crushed clove of garlic
- 1/2 teaspoons carom seeds or ajwain (optional)
- oil (vegetable oil/rapeseed) for deep frying as needed
- Salt & Pepper
- 1cup chopped cooked potatoes chopped
- 1 medium carrot or beetroot
- (3/4 cup julienned)
- 1/4 cup peppers (aka capsicum/bell peppers)
- 1 cup cabbage (shredded)
- 1 large onion (thinly sliced)
- 6 french beans (julienned-optional)
- 1 cup spinach chopped (optional)
Preparation
Mix well with cold water to create consistency on pics
A pinch of baking powder can also be added if required fir extra crispness
Allow to marinate & soak up flavours for a while before frying
Drain on kitchen paper, serve with lemon wedges
