Quick and Delicious Palak Paneer
Ingredients
- 500g frozen spinach
- 1 Tbsp ginger paste
- 1/2 cup pre-soaked cashew nuts (for 10 minutes)
- 1/2 Tbsp chopped garlic
- 1/2 cup chopped white onions
- 1/2 Tbsp chopped green chillies (optional)
- 1 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp coriander & cumin powder
- 1/2 Tbsp garam masala
- Salt to taste
- 1 Tbsp oil
- 350g paneer cubes
Preparation
In a non-stick pan, brown the paneer cubes on medium-low flame, turning regularly.
Meanwhile, heat oil in a separate pan and fry the garlic and onions for 1 minute until translucent.
Add ginger and green chillies to the pan.
Add frozen spinach and allow it to thaw.
Add the remaining spices and let it cook for 5 minutes.
Transfer the mixture to a blender (e.g., @nutribullet), add the soaked cashews, and blitz. Ensure you vent the blender due to steam pressure buildup.
Add the browned paneer cubes into the spinach purée, heat a little more, and serve.
