Savoury Semolina Pudding
Ingredients
- 1/2 cup coarse semolina
- 1 cup + 2 tablespoons water, boiling
- 1 onion finely, chopped
- 1 tomato, finely chopped
- 1/2 an inch ginger grated
- 1/2 a carrot grated
- 5-6 snow peas sliced
- 2 green chillies slit
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon urad dal/ black gram
- 1 teaspoon channa dal/ split Bengal gram
- Few curry leaves
- 1/2 a teaspoon turmeric powder
- Pinch of asafoetida
- 1/4 th teaspoon ground cinammon
- Pinch of sugar
- 2 teaspoons lemon juice
- Few sprigs of coriander
- Salt to taste
- Oil 1 tablespoon
Preparation
Roast the semolina in a pan for a couple of minutes stirring in between on a low flame until it loses its rawness. And set aside
In a pan heat some add oil, splutter the mustard, follow it up by urad dal and channa dal, roast them on a low flame till you see the colour change, now add the asoefetida, curry leaves, green chillies, ginger, give it a stir
Add the turmeric, cinammon and the onions with a pinch of salt and sweat them briefly and let it cook until transparent and crunchy, now tip in the grated carrots, snow peas and let them soften
Add the tomatoes and stir it around and pour the water, add salt, pinch of sugar lemon juice and Corinader. Taste this water and you must taste a very salty water ( semolina absorbs the salt so go an extra pinch than you would normally) now bring the flame to low and slowly incorporate the semolina into the pot whilst continuously stirring to avoid any lumps. Cover and cook for about 2 minutes or until all the water is absorbed. Enjoy
Note
Add cashews or any other vegetable you like. Reducing or adding more water will alter the consistency , alter to suit your preference
