Sweet Potato and Lentil Dahl

Ingredients

  • 2 onions, chopped
  • 500g sweet potato, cubes
  • 4 garlic cloves, minced
  • 4 tsps curry paste
  • 700ml vegetable stock
  • a tin of green lentils
  • a pinch of salt and pepper
  • a handful of spinach -

Preparation

  1. Cook the onion in a little oil for a few minutes

  2. Add the garlic and cook for another minute

  3. Add the sweet potato and the curry paste to the pan and stir until all the vegetables are coated in the paste

  4. Add the stock, salt and pepper to the pan and pop a lid on it

  5. Cook for five minutes

  6. Add the lentils and cook for another 15-20 minutes

  7. Once the sweet potato is soft, stir in some spinach

  8. Enjoy!
