Vegetable Sambar Lentil Soup

Ingredients

  • Lentils
  • Carrots
  • Radish
  • Beetroot
  • Green beans
  • Green chilies
  • Curry leaves
  • Cumin seeds
  • Mustard seeds
  • Tamarind paste
  • Salt
  • Water
  • Coriander leaves

Preparation

  1. Pressure cook the lentils until soft.

  2. Pressure cook the vegetables until tender.

  3. In a pan, prepare a tempering by heating oil and adding cumin seeds, mustard seeds, and curry leaves, then add tamarind paste.

  4. Once the raw smell of tamarind dissipates, add the pressure-cooked vegetables and salt.

  5. Mash the cooked lentils well and add them to the sambar along with the required amount of water.

  6. Simmer the mixture until it boils and thickens slightly.

  7. Garnish with coriander leaves and serve with steamed rice.

Notes

  1. Sambar is an excellent source of protein from lentils and vitamins from vegetables.
