Braised Cannellini Beans in Cherry Tomato Sauce

Ingredients

  • 2 punnets cherry tomatoes (yellow and red variety)
  • 1/2 red onion
  • 4 cloves garlic
  • 2 tins cannellini beans
  • Basil

Optional

  • Pine nuts
  • Soft vegan cheese such as ricotta, stracciatella, or mozzarella

Preparation

  1. Dice the onion and slice the garlic.

  2. Halve the tomatoes.

  3. Heat oil in a large pan and fry the onion for 5 minutes.

  4. Add the garlic and as soon as it starts to color add the tomatoes.

  5. Once they start to break down add a little splash of water to keep it juicy.

  6. When they are nice and saucy get a stick blender and blend until roughly smooth.

  7. Drain the cannellini beans and add them in.

  8. Simmer for a couple of minutes and then serve with lashings of olive oil, basil and pine nuts and cheese if using.

  9. Serve hot with good crusty bread

Tips

  1. Cutting the tomatoes in half speeds up the time it takes them to break down in the pan.

  2. This dish is delicious when mopped up with good crusty bread
