Broccoli and Pea Gnocchi

Ingredients

  • 350g fresh gnocchi
  • 250g broccoli, florets
  • 100g frozen peas
  • 100g button mushrooms, sliced
  • 4 tbsp crème fraîche
  • 1/2 tbsp dijon mustard
  • 1/2 cup of grated parmesan
  • 1/2 lemon, zest and juice
  • 2 tbsp olive oil

Preparation

  1. Mix together the crème fraîche, dijon mustard, parmesan and lemon juice then set the sauce to one side

  2. Bring a large pan of water to the boil, add the broccoli and cook for 2 minutes

  3. Add the gnocchi and simmer for 1 minute or until it begins to float, then drain both

  4. Heat some olive oil in a non-stick frying pan and sauté the mushrooms for a minute

  5. Add the gnocchi, broccoli and peas and stir

  6. Add the sauce and stir through until warmed and the parmesan has melted

  7. Season with freshly ground black pepper then serve
