Broccoli and Pea Gnocchi
Ingredients
- 350g fresh gnocchi
- 250g broccoli, florets
- 100g frozen peas
- 100g button mushrooms, sliced
- 4 tbsp crème fraîche
- 1/2 tbsp dijon mustard
- 1/2 cup of grated parmesan
- 1/2 lemon, zest and juice
- 2 tbsp olive oil
Preparation
Mix together the crème fraîche, dijon mustard, parmesan and lemon juice then set the sauce to one side
Bring a large pan of water to the boil, add the broccoli and cook for 2 minutes
Add the gnocchi and simmer for 1 minute or until it begins to float, then drain both
Heat some olive oil in a non-stick frying pan and sauté the mushrooms for a minute
Add the gnocchi, broccoli and peas and stir
Add the sauce and stir through until warmed and the parmesan has melted
Season with freshly ground black pepper then serve
