Burrito Lasagna


  • 1 cup of brown rice
  • 1 package(or can) of black beans
  • 1 tsp of chilli powder
  • 1 tsp of salt
  • 1/2 tsp of garlic powder
  • 1/8 tsp of black pepper
  • 1/8 tsp of cayenne pepper
  • 1 cup of chopped green bell pepper
  • 1/2 cup of chopped yellow onion
  • 1 chopped california chilli pepper
  • 4 large tortillas
  • 1 1/4 cup of vegan queso
  • 1 cup chopped vine ripe tomatoes


  1. In a small pot cook rice( we seasoned ours with a dash of salt and olive oil )

  2. Prepare black beans with all seasonings in a bowl, add to rice when done, stir turn off heat and set aside

  3. Heat a cast iron pan on medium heat, add onions, pepper, and green bell pepper, cook for about 8 minutes or until onions have browned

  4. Preheat oven to 350 °, use a greased pie dish and place first tortilla down (you may have to trim to size) use a spoon to spread queso evenly on surface, then add rice and beans then veggies and last your fresh chopped tomatoes distribte ingredients evenly and repeat til finished

  5. On the last tortilla add remaining queso and any other veggies you may have and bake for 15 minutes

  6. Once done allow to cool garnish with fresh red bell peppers, purple cabbage, avocado, and red pepper flakes, and bring it on
