Chocolate Tagliolini with Grana Padano Fondue
Ingredients
For the tagliolini
- 270g all-purpose flour
- 30g unsweetened cocoa powder
- 2 eggs
- 3 egg yolks
For the grana padano fondue
- 200g grated Grana Padano cheese
- 250g fresh heavy cream
Additionally
- 40g grated Grana Padano cheese (for wafers)
- 20g butter
Preparation
Mix the flour, cocoa powder, eggs, and egg yolks to form a smooth dough.
Knead the dough until elastic and let it rest for at least 30 minutes.
Roll out the dough and cut it into tagliolini strips.
Heat the heavy cream in a saucepan over medium heat.
Add the grated Grana Padano cheese to the cream and stir until fully melted and smooth.
For the cheese wafers, melt the butter in a pan and cook the grated cheese until crisp, or bake it in the oven until golden.
Cook the tagliolini in boiling salted water until al dente.
Drain the pasta and toss it with the fondue sauce.
Serve the dish garnished with the cheese wafers.
